    Beginner

    The gateway one-pot meal. Hard to get wrong, endlessly customisable, and tastes better the next day. Build layers of flavour by blooming the spices in oil before adding the liquid. Serve with rice, nachos, or a baked potato.

    Proper Bolognese

    Beginner

    Not the 20-minute student version. A proper ragù: soffritto, wine, milk, and time. The milk tenderises the meat and the long simmer builds layers of flavour that a quick sauce can't touch. Worth every minute.

    Chicken Curry from Scratch

    Beginner

    A proper curry that doesn't come from a jar. Blooming whole spices in oil, building a tomato-onion base, and simmering chicken thighs until tender. Cheaper, healthier, and infinitely better than a takeaway.

    Beef Stew

    Beginner

    Low and slow comfort food. Tough, cheap cuts of beef (chuck, shin) become meltingly tender after 2-3 hours of braising. The secret is browning the meat properly first — that caramelisation is where the depth comes from.

    Risotto

    Intermediate

    The most impressive one-pot meal you can make. Looks cheffy, tastes restaurant-quality, costs almost nothing. The technique is simple: toast the rice, add warm stock gradually, stir, and finish with butter and parmesan. Patience is the only skill required.

    Soup from Anything

    Beginner

    The ultimate fridge-clearing, money-saving, soul-warming meal. Almost any vegetable can become soup: soften in butter, add stock, simmer, blend. Once you know the formula, you'll never buy tinned soup again.
