Planning the Evening
The secret to a great date night at home isn't just the food — it's eliminating stress so you can actually enjoy it. Prep ahead, set the scene, time your courses, and have a plan. This module is the project management of romance.
Do ALL your prep the day before or afternoon of. Fondant batter in the fridge, scallops patted dry, lamb at room temp, pasta dough resting. Zero stress at showtime.
Light candles, dim overhead lights, put your phone away. The ambience matters more than the food being Michelin-perfect.
A simple cheese board while you cook the starter buys you time and keeps your guest happy. Crackers, 2-3 cheeses, grapes, chutney. Done.
Music: create a playlist beforehand. Jazz, soul, or acoustic. Nothing with lyrics that compete with conversation. Spotify's 'Dinner Jazz' playlists are genuinely good.
PLAN YOUR MENU: Pick a starter, main, and dessert from this series. Don't attempt all three for the first time on the same night
SHOP: Buy everything the day before. Include wine/drinks, candles, and any table decorations
PREP DAY-OF (afternoon): Make fondant batter → fridge. Make pasta dough → rest. Prep pea purée → fridge
SET THE TABLE: Cloth napkins if you have them, candles, water glasses, wine glasses
PLAYLIST: Queue up 2-3 hours of music. Press play before your guest arrives
DRINKS: Have a cocktail ready to make when they arrive (Module 05). A martini takes 3 minutes
TIMING: Starter while oven preheats for main. Main in oven while you eat starter. Fondants in oven while you eat main
Clear as you go. Nobody wants to see the aftermath of cooking in the kitchen
Enjoy it. The effort IS the gift. Even if the fondant doesn't turn out perfectly, you made the effort. That's what matters
